Chicken and broccoli couscous

  1. In a bowl, toss the sliced chicken with the oil and half the lemon juice.
  2. Heat a large nonstick frying pan and add the chicken, garlic and onion.
  3. Cook for 8-10 minutes, stirring, until the onion has softened and the chicken has cooked through.
  4. Cook the broccoli in a large pan on booking water for 4 minutes, then drain and add it to the chicken along with the chilli.
  5. Stir and cook for another 2 minutes.
  6. Meanwhile, put the couscous in a bowl and pour over enough boiling water to cover.
  7. Leave to stand for 2-3 minutes, until all the water has been absorbed.
  8. Fluff up with a fork, and site in the chicken along with the zest, parsely and lemon juice
