Basic Red Sauce
- 6 whole Dry New Mexico Chile Peppers
- 3 whole Chile De Arbol Pepper
- 6 pieces Tomatillos
- 3 cups Water
- 1/4 pieces Onion
- 2 teaspoons Salt
- 1 pinch Cumin
- 1 piece Whole Cloves
- 1 clove Garlic
- Wash chiles, remove stems and seeds, remove the husk off the tomatillos and wash (they tend to have a sticky skin).
- Into a large pot place the water, chile peppers, tomatillos and bring to a boil.
- Then reduce heat and cook for an additional 20 minutes.
- Remove items from pot and place in blender along with onion, salt, cumin, whole clove and garlic.
- Puree until smooth consistency (add water from pot if the sauce seems too thick).
- This sauce is great and can be used for many dishes.
