White Bean Soup With Spinach
- 2 quarts chicken stock
- 1 12 cups dried great northern beans
- 14 cup pearl barley
- 1 large onion, chopped
- 13 cup sliced carrot
- 13 cup sliced celery
- 2 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon dried marjoram
- 1 teaspoon dried basil
- 12 teaspoon dried thyme
- 1 (14 ounce) can diced tomatoes
- 10 ounces frozen spinach, thawed and drained
- salt and pepper
- Combine all ingredients except tomatoes and spinach in slow cooker.
- Cover and cook on low 7-8 hours or until beans are tender.
- Add tomatoes and spinach during last 30 minutes.
- Discard bay leaf, season to taste with salt and pepper.
