Tex Mex Lasagna
- 2 pounds Ground Beef
- 2 whole Medium Onions, Chopped
- 1 whole Green Pepper, Chopped
- 1- 1/2 teaspoon Ground Cumin
- 1- 1/2 teaspoon Chili Powder
- 1 package Fajita Seasoning Mix
- 1/2 cups Sour Cream
- 1 bar Cream Cheese
- 1 cup Cheddar Cheese, Grated
- 1 cup Mozzarella Cheese, Grated
- 1/4 cups Sliced Black Olives
- Directions:
- 1.
- Preheat oven to 350 F.
- 2.
- In a big frying pan, brown the ground beef, onions and peppers until meat is cooked through and veggies are soft.
- Add cumin, chili powder and fajita mix and stir.
- Add sour cream and cream cheese and mix well.
- Turn off heat and set aside.
- 3.
- Cut each tortilla into 3 equal slices (not wedges).
- 4.
- Cover bottom of a 9x13 casserole with a thin layer of salsa.
- 5.
- Make a layer of tortillas so that the entire bottom is covered, then cover again with more tortilla (3 tortillas total).
- 6.
- Top with half of beef mixture and then with some grated mozzarella (like you would top a lasagna).
- 7.
- Repeat the layer of tortillas with the remaining tortilla pieces.
- 8.
- Add the rest of the beef mixture.
- 9.
- Top with a mix of grated cheddar and mozzarella (or any other good melting cheese of your choice).
- 10.
- Top with sliced black olives.
- 11.
- Bake in preheated oven for 30 minutes.
- 12.
- Let sit for 10 minutes, then cut and serve.
- 13.
- Top with your choice of toppings: diced green onion, diced tomatoes, sour cream, salsa, sliced black olives, jalapeno peppers, etc.
