ANZAC biscuits
- 1 cup all purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar or 1 cup white
- 1 cup coconut flakes
- 4 oz butter
- 1 tbsp golden syrup
- 2 tbsp boiling water
- 1 tsp baking soda
- Grease cookie tray and preheat oven to 350F.
- Mix flour, oats, sugar and coconut flakes with a whisk.
- Melt butter and syrup over low heat.
- Add boiling water to baking soda.
- Mix well and remove from heat.
- Mix the liquid and dry ingredients well.
- Drop walnut sized spoon fulls of batter.
- Place on tray with room to expand.
- Cook for 12 to 15 minutes- just until golden brown.
- Let biscuits sit, five minutes, then move to cooling racks.
- Golden Syrup: Inverted sugar syrup thick in consistency sweet in taste.
