Creamed Smoked Turkey Recipe
- 1/4 c. butter
- 1/4 c. flour
- 4 c. half & half
- 3 tbsp. dry vermouth
- 1/2 pound fresh snow peas or possibly 1 pkg. frzn
- 2 1/2 pound smoked turkey, cubed
- 1/2 c. dry apricots, sliced thin
- 1 can water chestnuts, sliced
- In a large saucepan, heat butter, then stir in flour.
- Cook 1 minute till smooth.
- Gradually add in cream, stirring constantly over low heat.
- Add in wine.
- Add in turkey, apricots, and water chestnuts.
- Cook on medium, stirring constantly.
- Add in peas just before serving, but heated through.
- Serve over toasted English muffins, toast points or possibly biscuits.
- Makes 16 servings, 1/2 c. each at 280 calories.
