Thrifty Buttermilk Lemon Pound Cake Recipe
- 1 1/2 c. butter, softened
- 2 1/2 c. sugar
- 4 Large eggs
- 3 1/2 c. flour
- 1/2 teaspoon salt
- 1/2 teaspoon soda
- 1 c. buttermilk
- 2 tbsp. lemon extract
- Cream butter and sugar in mixer bowl till light and fluffy.
- Add in Large eggs one at a time, beating well after each addition.
- Sift flour, salt and soda together.
- Add in to creamed mix alternately with buttermilk, beating well after each addition.
- Stir in lemon extract.
- Pour into a greased and floured tube pan.
- Bake at 325 degrees for 1 1/4 hrs.
- Cold in pan.
- Invert onto serving plate.
