Angel Hair with Prosciutto
- 3 tbsp. olive oil
- 3 tbsp. butter
- 1/2 lb. sliced mushrooms
- 3/4 lb. prosciutto, chopped
- 3 md. tomatoes, finely chopped
- 1 tsp. sage
- 1 cup heavy cream
- 1 lb. angel hair
- capellini
- Salt and pepper to taste
- 1/2 cup parmesan cheese
- 1/2 cup finely chopped parsley
- Saute mushrooms in heated oil & butter until lightly browned, about 8 minutes.
- Add prosciutto, tomatoes, sage and cream.
- Heat on high until sauce begins to thicken; reduce heat to very low to keep warm while pasta cooks.
- Cook pasta; drain and place in heated serving container.
- Season with salt and pepper; toss with sauce and Parmesan cheese.
- Sprinkle with parsley and serve immediately.
