Spicy Cabbage
- 1/2 heads Green Cabbage
- 1/2 heads Purple Cabbage
- 1 whole Purple Onion
- 1 whole Jalapeno, 1/2 The Seeds Removed
- 4 whole Carrots, Scrubbed
- 1 bunch Radishes, Sliced
- 1 bunch Cilantro, Roughly Chopped
- 1 whole Lime, Juiced
- 1/2 cups White Wine Vinegar
- 1 teaspoon Sea Salt
- 1 teaspoon Black Pepper
- Add slicing attachment to a food processor.
- Add both cabbages, onion, jalapeno and carrots into the processor working in batches as needed.
- You will probably have to empty the bowl a few times.
- Add all of the sliced veggies to a large bowl and add in radishes and cilantro.
- Add in lime juice, vinegar, salt and pepper.
- You may need to add more vinegar, salt and/or pepper depending on your taste.
- The cabbage mixture should be pretty moist, you dont want it too dry.
- Give everything a good toss.
- Cover bowl and let this lovely combination sit in the fridge for at least 1 hour.
- Serve with blue corn tortilla chips or as a wonderful topping to tacos.
