Chicken Lime Soup
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 cup chopped onion
- 3 garlic cloves, minced
- 2 teaspoons dried oregano leaves
- 1 bay leaf
- 1 12 cups shredded cooked chicken
- 1 12 quarts chicken broth
- 12 cup fresh lime juice
- salt and black pepper
- 1 cup shredded monterey jack and cheddar cheese blend
- 12 cup chopped cilantro
- Mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot.
- Cook on medium-high heat 10 minutes, stirring occasionally.
- Add chicken, chicken broth and lime juice.
- Bring to boil.
- Reduce heat to medium-low; simmer 30 minutes.
- Remove and discard bay leaf.
- Season soup with salt and black pepper to taste.
- Serve in soup bowls topped with cheese and cilantro.
- May also top with sour cream & tortillas if desired!
