Barbecue Chicken Grilled Cheese

  1. Heat 1 teaspoon of the olive oil in a small pan.
  2. When hot, add the thinly sliced red onions and saute for about 5 minutes until soft.
  3. Remove from the heat and set aside.
  4. In a small bowl, combine the shredded chicken breast and barbecue sauce.
  5. In a separate bowl, combine the mozzarella and cheddar cheeses.
  6. Now its time to assemble your grilled cheese.
  7. To assemble each sandwich: Brush one side of each piece of bread with olive oil (about 1 teaspoon per piece).
  8. Place the bread oil-side down on a cutting board.
  9. Top one piece of bread with 1/3 cup of the cheese mixture and 1/3 cup of the barbecue chicken.
  10. Add 1/3 of the sliced avocado and then add 1/3 of the onions and 1/3 of the cilantro leaves.
  11. Top with another 1/3 cup of cheese in an even layer.
  12. Add the second piece of bread with the oiled side facing out (duh).
  13. Repeat making the rest of the sandwiches.
  14. Set sandwiches aside for a moment.
  15. Heat a large non-stick pan or skillet (use one with a lid because youll need it in a moment) over medium heat.
  16. When hot add the sandwiches and cover pan with a lid.
  17. Cook for about 4 minutes until the underside is golden brown.
  18. Flip the sandwiches and cook for 3-4 minutes more.
  19. Remove your grilled cheese from the pan and serve immediately with extra barbecue sauce or ranch dressing for dipping.
