Marinated Green Beans with Tomatoes & Olives
- 2 lb fresh green beans trimmed
- 1 1/2 tsp salt, divided
- 2 garlic cloves, minced
- 1/4 cup olive oil
- 1 cup kalamanta olives, sliced
- 2 tomatoes, seeded & chopped
- 2 tbsp red wine vinegar
- 1 tbsp fresh oregano, finely chopped
- 1/4 tsp pepper
- 2 4 oz. packages, crumbled feta cheese
- Place beans in boiling water seasoned with 1 teaspoon of salt.
- Cook 6-8 minutes or until crisp-tender.
- Drain, then plunge beans in ice cold water to stop the cooking proceess.
- Place in a shallow serving dish.
- Cook garlic in hot oil over medium heat for 30 seconds or just until fragrant, remove from heat.
- Stir in loives, next 4 ingredients, and remaining 1/2 teaspoon of salt.
- Pour mixture over beans, tossing to coat.Chill at least 3 hours, or over night.
- Sprinkle with feta cheese, garnish if desired.
