Marinated Green Beans with Tomatoes & Olives

  1. Place beans in boiling water seasoned with 1 teaspoon of salt.
  2. Cook 6-8 minutes or until crisp-tender.
  3. Drain, then plunge beans in ice cold water to stop the cooking proceess.
  4. Place in a shallow serving dish.
  5. Cook garlic in hot oil over medium heat for 30 seconds or just until fragrant, remove from heat.
  6. Stir in loives, next 4 ingredients, and remaining 1/2 teaspoon of salt.
  7. Pour mixture over beans, tossing to coat.Chill at least 3 hours, or over night.
  8. Sprinkle with feta cheese, garnish if desired.
