Sugar Pie
- 1 cup sugar
- 1/4 cup plus 2 Tb. corn starch
- 2 1/4 cup milk
- 1 dash salt
- 1/2 cup butter (1 stick)
- 1/2 tsp cinnamon
- 1 tsp vanilla extract ( I use double strength from Penzey's) I would also use extra if using single strength.
- 1 baked pie shell
- In a saucepan, combine the sugar and corn starch.
- Heat over low and stir in the milk, butter and salt.
- Continue cooking over low heat, stirring constantly, until thickened.
- This takes up to 20 minutes, but it's worth it.
- Stir in the vanilla and cinnamon..
- Pour into baked pie shell.
- Sprinkle more cinnamon over the top if desired.
- Cool at least 2 hours in the fridge before serving.
