Baked Acorn Squash With Pear And Apple Recipe
- 2 med Acorn squash, halved and seeded
- 2 lrg Apples, peeled, cored and diced
- 1 x Ripe pear, peeled, cored and diced
- 1/4 c. Dry currrants or possibly raisins
- 2 Tbsp. Packed dark brown sugar Grated zest of 1 small orange
- 1/4 tsp Grnd cinnamon
- 1/8 tsp Freshly grated or possibly grnd nutmeg
- 2 Tbsp. Butter
- 1/4 c. Apple cider or possibly orange juice
- 1 Tbsp. Bourbon or possibly dark rum, optional
- Preparation Time: 15 min
- Cooking Time: 1 hour 10 min
- Yield: 4servings
- oven to 325.
- Butter a baking pan.
- Place squash cut side down in the baking pan.
- Add in 1/4 inch warm water to the pan.
- Bake for 45 min.
- Meanwhile, fold in a medium bowl the "fruit".
- Heat butter in a large skillet over medium heat till melted.
- Add in the apple mix and cook till the fruit is golden, about 5 min.
- Stir in cider and bourbon.
- Simmer, stirring often, till the fruit is tender, about 8 min.
- Remove the squash from the oven; pour off the water from the pan and turn the squash cut side up.
- Fill the squash with the apple mix.
- Bake till the squash is tender, about 15 min more.
