Little River Breakfast Hash Browns Recipe
- 2 c. cooked roast beef or possibly ham, diced
- 2 c. cool, boiled potatoes, diced
- 1 teaspoon Worcestershire sauce
- Salt & pepper to taste
- 4 tbsp. butter
- 1 sm. onion, finely minced
- Chop meat and potatoes by hand.
- Combine with Worcestershire sauce, salt, pepper and mix well.
- Heat butter in skillet and saute/fry onion till tender.
- Add in hash mix.
- Pour in sufficient water for it to show through the mix in skillet.
- Cook over medium heat, pressing down occasionally with spatula till crust has formed on bottom and water is absorbed.
- Do not rush the cooking.
- Serve with poached Large eggs and toast.
