Finnish Butter Cookies

  1. In a mixing bowl, cream butter and sugar.
  2. Stir in extract.
  3. Add 1-1/4 cups flour; mix well.
  4. Knead in remaining flour.
  5. Cover and chill at least 2 hours.
  6. Roll out on a lightly floured surface to 1/4-inch thickness.
  7. Cut with a small cookie cutter (1-1/2 to 2-inches).
  8. Place on ungreased baking sheets.
  9. Beat egg white until foamy; brush over cookies.
  10. Sprinkle with sugar and almonds.
  11. Bake at 350F for 7-8 minutes or until lightly browned.
  12. Cool on wire racks.
