Dried Apricot And Pineapple Jam Recipe
- 1 pound dry apricots
- 1 lg. fresh pineapple
- Sugar
- Soak the apricots in water to cover overnight.
- Place them to cook in the same water.
- Cook till tender.
- Mash them or possibly chop in blender.
- Peel, core, and cut the pineapple into small pcs.
- Cover with water and cook till tender.
- Measure the fruits and juices.
- Place equal amounts of sugar with the measured fruits into a heavy kettle and cook slowly till thick and clear.
- Note: This is a way to stretch the apricot flavor when you have to pay a high price for perhaps imported dry apricots.
- Or possibly if you are in the States this makes a nice tasting jam when pineapple is expensive.
- You could also use canned pineapple, if available.
