Smoky Chickpeas with Chard & Zucchini

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and zucchini and saute until they begin to soften, about 35 minutes.
  3. Stir in garlic and saute for another 2 minutes, then add in chickpeas.
  4. Season with paprika, salt, and pepper.
  5. Continue to cook, stirring often, until the chickpeas are warm and a thin crust begins to form.
  6. Once the chickpeas are almost done, stir in the rainbow chard.
  7. Top with lemon juice and cook until just wilted.
  8. Serve immediately and enjoy!
