Barbecue Ribs With Blended Fruit Recipe
- 5 lbs. pork ribs or possibly loin spare ribs
- 1 (16 ounce.) can apricots, liquid removed
- 1/4 c. firmly packed brown sugar
- 1 teaspoon chili pwdr
- 1/2 c. catsup
- 1/2 c. white vinegar
- 2 teaspoon Worcestershire sauce
- Place ribs in a large Dutch oven; cover with water.
- Bring to a boil; cover, reduce heat and simmer 35 min.
- Drain ribs, and arrange in a large shallow dish.
- Combine apricots and remaining ingredients in container of an electric blender; blend till smooth.
- Pour sauce over ribs, turning to coat; cover and marinate in refrigerator 8 hrs, turning occasionally.
- Remove ribs from marinade and place on a lightly greased rack in broiler pan, reserving marinade for basting.
- Bake at 425 degrees for 40 min, basting twice.
