Sage Dressing
- 1 lb. pork sausage
- 4 large loaves bread
- 4 to 5 c. celery
- 2 to 2 1/2 c. onions
- 4 to 6 eggs
- 6 to 8 Tbsp. sage
- salt to taste
- pepper
- 1 Tbsp. thyme
- 1 tsp. Italian seasoning
- 3 to 4 lb. skirt steak
- large can pineapple juice
- large bottle Italian salad dressing (not light)
- 1 tsp. oregano
- 1 tsp. crushed coriander seed
- 1/2 tsp. cumin
- 1/4 tsp. garlic powder
- onion and bell pepper strips, sauteed
- Cut skirt steak into strips.
- Marinate in glass dish for 24 hours in pineapple juice.
- Stir once or twice while marinating. Discard pineapple juice.
- Marinate 24 hours in glass dish in Italian dressing.
- Reserve dressing.
- Drain.
- Sprinkle with garlic powder, oregano, coriander seed and cumin.
