Garlic Mashed Potatoes
- 22 cloves garlic
- 2 lb. red new potatoes, unpeeled, cut in 1 inch pieces
- 1 cup whole milk
- 3/4 cup unsalted butter
- Salt and pepper
- Blanch 16 cloves galic in boiling water 3 separate times, 1 minute each time; set aside; mince remaining cloves.
- Cover potatoes with water in large saucepan; heat to boil; cook over med heat til tender about 12 minutes; drain well.
- Add milk, butter and all garlic to potatoes.
- Mash to desired consistency.
- Season w/salt and pepper.
