Old Fashioned Peanut Brittle

  1. Butter a medium pizza pan.
  2. Set on a thick towel or a couple of pot holders on a heat resistant surface.
  3. In a medium sized heavy bottom metal saucepan, combine sugar, Karo syrup, and water.
  4. Bring to boil.
  5. Cook, stirring occasionally, to hard ball stage.
  6. Add peanuts.
  7. Cook until peanuts begin to pop.
  8. Remove from heat.
  9. Stir in vanilla extract.
  10. Stir in baking soda.
  11. Let rise until it quits and stir it down.
  12. Let rise again and pour evenly onto prepared pizza pan.
  13. Let cool COMPLETELY before breaking into large pieces.
  14. Store tightly covered in a cool dry place.
