Incredibly Easy Chuck Roast with Tomato Gravy
- 1 whole 2-3 Pound Chuck Roast
- 2 cans (14 Oz. Size) Stewed Tomatoes
- 1 teaspoon Chopped Rosemary
- 1 teaspoon Sage
- 1 teaspoon Thyme
- 2 Tablespoons Flour
- 1/2 cups Water
- Salt And Pepper, to taste
- I use a crock pot, but you could put this in a Dutch oven over very low heat.
- Season the meat with salt and pepper.
- Put the chuck roast in crock pot and cover the meat with the stewed tomatoes.
- Let it cook on low heat all day 8-10 hours.
- Remove meat to a platter and put tomatoes and juices in a sauce pan.
- In a bowl, mix spices into the flour and stir in enough water in to make a thin paste.
- Whisk flour mixture into tomatoes and cook over medium heat until it thickens.
- I sometimes use a potato masher to break up the tomatoes if needed.
- Serve the gravy with the meat.
- This is great with mashed potatoes but noodles would be good too!
