- 1 cup cucumbers, peeled, seeded and chopped
- 16 each frozen BOCA Essentials Roasted Vegetable & Red Quinoa Burgers
- 16 slices mozzarella cheese slices
- 16 each multi-grain sandwich rolls, split
- 2-1/2 cups Thinly sliced fennel bulbs
- 32 slices Thinly sliced beefsteak tomatoes
- 32 each fresh basil leaves
- Pulse mayonnaise and cucumbers in food processor until blended.
- Cook burgers on well-oiled 350 degrees F griddle or flat-top grill 8 to 10 min.
- or until internal temperature registers 160 degrees F, turning halfway.
- Top with 1 cheese slice.
- Fill each bun with 2 Tbsp.
- cucumber sauce, 2-1/2 Tbsp.
- fennel, 1 burger, 2 tomato slices and 2 basil leaves.
