Turkey Meatloaf for Two

  1. Heat oven to 375 degrees F.
  2. Cut onion into wedges.
  3. Chop enough of the wedges to measure 1/4 cup; set aside.
  4. Combine remaining onion wedges, potatoes and carrots in large bowl.
  5. Add oil; toss to evenly coat.
  6. Spread onto bottom of 15x10x3/4-inch pan.
  7. Bake 15 min.
  8. Mix turkey, chopped onions, cracker crumbs and egg white in same bowl.
  9. Remove vegetables from oven; stir, then spoon to edges of pan.
  10. Shape turkey mixture into 6x3-inch oval loaf; place in centre of pan.
  11. Brush with barbecue sauce.
  12. Bake 15 to 20 min.
  13. or until meatloaf is done (165 degrees F) and vegetables are tender.
  14. Sprinkle cheese over vegetables.
