Turkey Meatloaf for Two
- 1 small sweet onion Safeway 1 lb For $1.49 thru 02/09
- 1/2 lb. (225 g) red potatoes (about 2), cut into 1-inch chunks
- 2 carrots, cut diagonally into 1-inch-thick slices King Sooper's 1 lb For $0.99 thru 02/09
- 2 tsp. olive oil
- 1/2 lb. (225 g) extra-lean ground turkey
- 6 whole wheat saltine crackers, crushed
- 1 egg white
- 2 Tbsp. Bull's-Eye Bold Original Barbecue Sauce
- 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
- Heat oven to 375 degrees F.
- Cut onion into wedges.
- Chop enough of the wedges to measure 1/4 cup; set aside.
- Combine remaining onion wedges, potatoes and carrots in large bowl.
- Add oil; toss to evenly coat.
- Spread onto bottom of 15x10x3/4-inch pan.
- Bake 15 min.
- Mix turkey, chopped onions, cracker crumbs and egg white in same bowl.
- Remove vegetables from oven; stir, then spoon to edges of pan.
- Shape turkey mixture into 6x3-inch oval loaf; place in centre of pan.
- Brush with barbecue sauce.
- Bake 15 to 20 min.
- or until meatloaf is done (165 degrees F) and vegetables are tender.
- Sprinkle cheese over vegetables.
