Quick and Easy Quesadillas
- 3 whole Chicken Breasts
- Lime Juice
- Salt And Pepper
- Rosemary, To Your Preference
- 4 whole Large Tortillas
- 1 can (15 Oz. Can) Black Beans
- 1 bag (8 Oz. Bag) Shredded Colby-jack Cheese
- Place whole chicken breasts in a dish, pour lime juice over chicken and season with salt, pepper, and rosemary.
- Let marinate for at least 15 minutes.
- Place chicken on the grill over medium heat.
- Cook for 25 minutes, flipping the chicken halfway through.
- (Cook time can vary depending on the thickness of your chicken.)
- After chicken is cooked, dice it up into small pieces.
- Heat black beans over medium heat.
- While the black beans are heating, place 1 large tortilla on a piece of aluminum foil, sprinkle cheese on top half of the tortilla.
- Once the beans are ready, add some on top of the cheese, followed by chicken pieces.
- Here you can use as much cheese, chicken, and beans as you want, or add other ingredients that you like.
- Place the entire piece of aluminum foil on a heated griddle (I usually heat mine to about 300 degrees) and wait for the cheese to melt.
- Fold the bottom half of the tortilla up and enjoy!
