Quick and Easy Quesadillas

  1. Place whole chicken breasts in a dish, pour lime juice over chicken and season with salt, pepper, and rosemary.
  2. Let marinate for at least 15 minutes.
  3. Place chicken on the grill over medium heat.
  4. Cook for 25 minutes, flipping the chicken halfway through.
  5. (Cook time can vary depending on the thickness of your chicken.)
  6. After chicken is cooked, dice it up into small pieces.
  7. Heat black beans over medium heat.
  8. While the black beans are heating, place 1 large tortilla on a piece of aluminum foil, sprinkle cheese on top half of the tortilla.
  9. Once the beans are ready, add some on top of the cheese, followed by chicken pieces.
  10. Here you can use as much cheese, chicken, and beans as you want, or add other ingredients that you like.
  11. Place the entire piece of aluminum foil on a heated griddle (I usually heat mine to about 300 degrees) and wait for the cheese to melt.
  12. Fold the bottom half of the tortilla up and enjoy!
