Mini Quiches Recipe
- 2 c. low fat cottage cheese
- 1 to 2 tbsp. low fat lowfat milk
- 1 teaspoon salad mustard
- Dash of white pepper
- Dash of nutmeg
- 2 dashes cayenne pepper
- 2 teaspoon dry chopped onion
- 1 (8 ounce.) carton of egg beaters
- 3/4 c. Swiss cheese
- 24 mini tart shells
- Combine low fat cottage cheese, low fat lowfat milk, salad mustard, pepper, nutmeg, cayenne pepper and chopped onion in blender.
- Blend till smooth and add in Egg Beaters and Swiss cheese.
- Blend till mixed.
- Pour into tart shells and bake at 375 degrees for 30 min, or possibly bake in regular pie shell at 375 degrees for 45 min.
- Can be prepared early and frzn.
