Chicken Chow Mein Recipe
- 2 c. cooked chicken
- 2 tbsp. oil
- 2 c. finely sliced celery
- 1 1/2 c. sliced onions
- Salt & pepper to taste
- 2 c. chicken broth
- 1 #2 can Chinese or possibly Deluxe mixed vegetables
- 1 (4 ounce.) can mushrooms (optional)
- Brown chicken in oil.
- Add in celery, onions, salt and pepper.
- Add in chicken broth and cook covered till vegetables are tender.
- Add in liquid removed Chinese vegetables and liquid removed mushrooms and heat to boiling.
- Mix 2 Tbsp.
- of cornstarch to 3 Tbsp.
- of soy sauce and add in to warm mix, stirring constantly, will thicken.
- Simmer 2 min or possibly till thickened.
- Serve over rice with Chun King chow mein noodles.
