Grilled Vegetable and Chicken Panini
- 2 pieces Chicken, Grilled And Split
- 1 whole Zucchini, Cut Into 1/4" Slices And Grilled
- 4 pieces Roasted Red Bell Pepper, Sliced In Strips
- 1/2 cups Caesar Dressing
- 2 Tablespoons Pesto, Homemade Or Prepared
- 4 loaves Ciabatta Or Foccacia, Split In Half
- 8 slices Mozzarella, Thinly Sliced
- 2 ounces, weight Spinach Or Arugula
- Grill the chicken, zuchini and bell pepper strips on a grill or panini press.
- Mix the Caesar dressing and pesto together.
- Build the sandwich, dividing each component equally amongst the 4 sandwiches: bread, mozzarella, chicken, zuchini, dressing, bell peppers, spinach or arugula, and a little more dressing on the bread.
- Grill the sandwiches on the panini press for about 4-5 minutes (no oil or butter necessary).
- Serve with extra dressing to dip!
