Grilled Vegetable and Chicken Panini

  1. Grill the chicken, zuchini and bell pepper strips on a grill or panini press.
  2. Mix the Caesar dressing and pesto together.
  3. Build the sandwich, dividing each component equally amongst the 4 sandwiches: bread, mozzarella, chicken, zuchini, dressing, bell peppers, spinach or arugula, and a little more dressing on the bread.
  4. Grill the sandwiches on the panini press for about 4-5 minutes (no oil or butter necessary).
  5. Serve with extra dressing to dip!
