Quick, Healthy and Delicious Mexi Couscous. Vegan.

  1. In a medium sized pot, put the water on to boil.
  2. When boiling, add couscous, cover and remove from heat.
  3. Let sit for 5 minutes.
  4. Add remaining ingredients and stir.
  5. Serve and enjoy.
  6. For a gluten free alternative, make rice instead of couscous according to package directions and stir in other ingredients.
  7. For extra protein, substitute couscous with quinoa (make according to package directions).
