Sausage Ring With Cheese Scrambled Eggs Recipe
- 6 Large eggs
- 3/4 c. lowfat milk
- 3/4 c. crushed saltine crackers
- 1/2 c. minced peeled apple
- 1/8 c. minced onion
- 1 pound pork sausage
- 1 1/2 tbsp. butter
- 1 1/2 tbsp. all-purpose flour
- 1/2 c. cream style cottage cheese
- Pepper
- 1/4 teaspoon salt
- Beat together 1 egg and 1/4 c. lowfat milk.
- Stir in cracker crumbs, apple, onion and 1/8 tsp.
- pepper.
- Add in sausage; mix well.
- Firmly pat meat mix into ring shape onto a shallow baking pan.
- Bake in 350 degree oven for 50 min.
- Transfer to a platter and keep hot.
- Meanwhile, in 2 qt saucepan, heat butter.
- Blend in flour.
- Add in remaining lowfat milk all at once.
- Cook and stir over medium heat till bubbly.
- Cook and stir 2 min more.
- Beat together the remaining Large eggs, cheese, salt and pepper.
- Stir into sauce.
- Cook, stirring frequently, till Large eggs are hard but moist.
- Spoon Large eggs into center of sausage ring.
- Serves 6.
