Blintzes Apple Filling Recipe

• 1 x Egg white
• 1 1/2 c. Finely minced apples
• 4 Tbsp. Sugar
• 1/2 tsp Cinnamon
• 3 Tbsp. Brown sugar
• 3 Tbsp. Melted butter

1. Beat the egg white till it begins to stiffen.
2. Mix in the apples, sugar and cinnamon.
3. Fill the pancakes and arrange in a buttered baking pan.
4. Sprinkle with the brown sugar and butter.
5. Bake in a 400 degree oven 20 min.
6. Makes about 18.
