Chocolate Hazelnut and Cherry Bark

  1. Preheat oven to 350.
  2. Arrange hazelnuts on a baking sheet.
  3. Bake for 20 minutes, stirring once halfway through cooking.
  4. Turn nuts out onto a towel.
  5. Roll up towel, rub off skins.
  6. Chop nuts Coarsely.
  7. Mix together nuts, cherries, and ginger in a medium bowl.
  8. Add chocolate in a microwave-safe measuring cup.
  9. Microwave at HIGH 1 minute or until chocolate melts, stirring every 15 seconds.
  10. (Or use double boiler to melt the chocolate)
  11. Stir into nut mixture, stirring just until combined.
  12. Spread mixture evenly on a baking sheet lined with foil papper, freeze at least 1 hour.
  13. Break into unevenly pieces.
  14. Serve.
