Garlic Mashed Potatoes
- 3 lbs. all-purpose potatoes, peeled and cubed
- 4 whole cloves garlic
- 3/4 cup fat-free milk
- 1/2 cup margarine or butter
- salt and pepper to taste
- Chopped parsley, for garnish
- Mix potatoes and garlic in large saucepan; add water to cover.
- Heat to a boil.
- Reduce heat; simmer for 20 minutes or until potatoes are tender.
- Remove from heat; drain.
- Place potatoes and garlic in large bowl.
- Heat milk and margarine or butter in same saucepan over low heat until spread melts.
- Beat potatoes with electric mixer, gradually adding milk mixture until smooth.
- Season with salt and pepper to taste.
- Garnish with parsley.
