Italian Sausage & Pepper Croquettes

  1. Crumble sausage into medium skillet; cook on medium heat until evenly browned, stirring occasionally.
  2. Add peppers; cook 8 min.
  3. or until crisp-tender, stirring occasionally.
  4. Cool.
  5. Meanwhile, prepare stuffing as directed on package.
  6. Place bread crumbs in shallow dish.
  7. Combine sausage mixture, stuffing and egg; mix well.
  8. Shape into 16 patties, using about 1/4 cup sausage mixture for each.
  9. Add sausage patties, 1 at a time, to bread crumbs; turn to evenly coat both sides of each patty with crumbs.
  10. Cook patties, in batches, in large skillet sprayed with cooking spray on medium heat 4 to 5 min.
  11. on each side or until patties are golden brown and heated through, respraying skillet with cooking spray between batches if needed.
  12. Meanwhile, mix mayo and mustard until blended.
  13. Serve sausage patties with mayo mixture.
