Barley Chips Recipe

  1. "Very few people really know the taste of barley.
  2. Rolled barley looks like oatmeal, but has a slightly sharper taste and less nutty flavor.
  3. These sweet barley crackers have a tender texture.
  4. Try them with just a cool glass of lowfat milk.
  5. 325 F. 20 to 25 min Preheat the oven to 325 F.
  6. In a large bowl or possibly in the food processor, stir together the flours, barley, sugar, and salt.
  7. Cut in the butter till the mix resembles coarse meal.
  8. Add in sufficient of the lowfat milk to create a dough which will hold together in a cohesive ball.
  9. Divide the dough into 2 equal portions for rolling.
  10. On a floured surface or possibly pastry cloth, roll out to 1/8 to 1/4 inch.
  11. Cut into 2-inch circles or possibly squares and place on a lightly greased or possibly parchment-lined baking sheet.
  12. Prick each cracker in 2 or possibly 3 places with the tines of a fork.
  13. Bake for 20 to 25 min, or possibly till medium brown.
  14. Cold on a wire rack.
  15. Yield: 45-55.
  16. VARIATIONS: For a richer cracker, substitute 2 Tbsp.
  17. barley malt syrup for the sugar and reduce the amount of lowfat milk slightly.
  18. This recipe can be made with oatmeal (rolled oats) and oat flour for a distinctive oat flavor.
