Easy Bbq Pulled Chicken
- 1 medium onion, sliced
- 2 tbsp olive oil, extra virgin
- 2 garlic cloves, finely chopped
- 300 grams leftover cooked chicken, shredded
- 4 tbsp bbq sauce, your favourite
- 3 tbsp Sriracha sauce
- 1 1/2 tbsp apple cider vinegar
- 3/4 tbsp firmly packed brown sugar
- 4 tbsp ketchup
- 1/2 tsp Chili sauce
- 2 tbsp pickled jalapenos
- Heat the olive oil in a saucepan over medium heat.
- Add in the onion and garlic.
- Fry until the onion has softened.
- About 2-3 minutes.
- Add in the rest of the ingredients but not the chicken, reduce the heat to low and simmer for 15-20 minutes, stirring occasionally until the sauce has thickened and become syrup like.
- Add in the chicken and continue simmering for a further 5-10 minutes.
- Serve as you please.
