Beet Negroni
- 4 ounces Beet-Carrot-Apple Juice, recipe follows
- 2 ounces gin
- 1 ounce Campari
- Apple slice, for garnish
- 2 medium beets, trimmed and scrubbed
- 1 Granny Smith apple, peeled and cored
- 3 medium carrots, peeled
- Combine the Beet-Carrot-Apple Juice, gin and Campari in a cocktail shaker filled with ice.
- Shake vigorously for 8 to 10 seconds.
- Strain into a tall glass filled with ice.
- Garnish with the apple slice.
- Juice, in this order, the beets, apple and carrots, following your juicer's specific settings for each.
- Serve the juice immediately over ice, if desired.
- Yield: 8 to 10 ounces
