My Grandmother's Salt Rubbed Cucumber

  1. Randomly peel the cucumbers (since the skin is tough).
  2. Cut the cucumbers in half lengthwise, and scoop out the seeds with a spoon.
  3. Slice the cucumbers, put into a bowl, sprinkle with salt and toss.
  4. After about 15 minutes when the cucumbers have wilted, squeeze out twice to remove the water.
  5. Add the sugar and vinegar to the squeezed out cucumbers.
  6. Taste, and add more salt if needed.
  7. Sprinkle with the sesame seeds and mix to finish.
