My Grandmother's Salt Rubbed Cucumber
- 6 Cucumbers (large)
- 2 tbsp Salt
- 3 tbsp Sugar
- 5 tbsp Grain vinegar
- 3 tbsp Ground white sesame seeds
- Randomly peel the cucumbers (since the skin is tough).
- Cut the cucumbers in half lengthwise, and scoop out the seeds with a spoon.
- Slice the cucumbers, put into a bowl, sprinkle with salt and toss.
- After about 15 minutes when the cucumbers have wilted, squeeze out twice to remove the water.
- Add the sugar and vinegar to the squeezed out cucumbers.
- Taste, and add more salt if needed.
- Sprinkle with the sesame seeds and mix to finish.
