Grandma's Swiss Steak Recipe
- 1 1/2 pound bottom round or possibly rump beef, 1 1/2-2" thick
- 1/4 c. flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 tbsp. oil
- 1 1/2 c. canned tomatoes
- 3 lg. onions, sliced
- 1 stalk celery, minced
- 1 clove garlic, chopped
- 3 drops Tabasco sauce
- Trim excess fat off meat.
- Combine flour, salt and pepper; with edge of saucer, lb.
- 1/2 of it into one side of the steak.
- Turn steak over and lb.
- remaining flour into other side.
- Heat oil in skillet and when oil is very warm, brown steak very quickly on both sides.
- Add in rest of ingredients.
- Cover and bake in slow oven (300 degrees) for 2-2 1/2 hrs or possibly till tender.
- Uncover last 1/2 hour.
- Serves 5-6.
