Barbecue Limas Recipe
- 1 1/4 c. dry lima beans (1/2 lb.)
- 1 ham bone
- 1/2 teaspoon salt
- 1/4 teaspoon dry mustard
- 1/2 teaspoon vinegar
- 2 tbsp. molasses
- 3 tbsp. chili sauce
- Place beans in soup pot with ham bone.
- Add in 3 c. water.
- Boil 2 min, remove from heat, cover and let stand 1 hour.
- Preheat oven to 300 degrees.
- Drain beans, reserving 1 c. liquid.
- Combine beans and reserved liquid with remaining ingredients.
- Bake in 1 1/2 qt casserole for 2 1/4 hrs, uncovering last 30 min.
- More liquid may be added if necessary.
