Banana-Nut Bread with Flax
- 1 egg
- 1 cup mashed fully ripe bananas (about 3)
- 3/4 cup Miracle Whip Original Spread
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 cup sugar
- 1/2 cup ground flax seed
- 1 tsp. baking soda
- 1/2 cup chopped walnuts
- Heat oven to 350F.
- Mix egg, bananas and Miracle Whip until blended.
- Combine all remaining ingredients except nuts in large bowl.
- Add banana mixture; stir just until dry ingredients are evenly moistened.
- (Batter will be lumpy.)
- Stir in nuts.
- Pour into 9x5-inch loaf pan sprayed with cooking spray.
- Bake 55 min.
- to 1 hour or until toothpick inserted in centre comes clean.
- Cool in pan 10 min.
- Remove from pan to wire rack; cool completely.
