Sweet And Sour Chicken

  1. Brown chicken in hot oil in large skillet.
  2. Add peppers and carrot; cook and stir for 2 minutes.
  3. Mix cornstarch with soy sauce; add to pan with pineapple, juice, vinegar, brown sugar and ginger.
  4. Bring to a boil for 1 minute.
  5. Add chicken and cook for 20 minutes.
  6. Serve over rice.
