Sweet And Sour Chicken
- 1 lb. boneless chicken breasts, cut in strips
- 2 Tbsp. oil
- 1/2 c. green pepper strips
- 1/2 c. red pepper strips
- 1 c. carrot strips
- 1 clove garlic, crushed
- 1 Tbsp. cornstarch
- 1/4 c. soy sauce
- 1 (8 oz.) can pineapple in juice
- 3 Tbsp. vinegar
- 3 Tbsp. brown sugar
- 1/2 tsp. ground ginger
- 1 1/2 c. Minute or long grain rice
- Brown chicken in hot oil in large skillet.
- Add peppers and carrot; cook and stir for 2 minutes.
- Mix cornstarch with soy sauce; add to pan with pineapple, juice, vinegar, brown sugar and ginger.
- Bring to a boil for 1 minute.
- Add chicken and cook for 20 minutes.
- Serve over rice.
