Chicken Deviled Eggs
- 6 hard-boiled eggs
- 12 cup very finely chopped cooked chicken meat
- 3 tablespoons mayonnaise
- 1 tablespoon grated onion
- 1 teaspoon Dijon mustard
- 12 teaspoon dry mustard
- 14 teaspoon hot sauce
- 1 tablespoon minced fresh parsley (use 1/2 t if dried)
- 1 pinch cayenne pepper (optional)
- paprika
- cut eggs lengthwise and put yolk section in a medium bowl.
- mash up all yolks with a fork.
- add mayonnaise and mix with fork breaking up any lumps you see.
- add chicken, onion, mayonnaise, dijon mustard and dry spice ingredients and with a spatula mix until bended.
- taste and adjust seasonings to suit you.
- stuff eggs with mixture and place on decorative platter sprinkle with paprika and place in refrigerator for at least 30 minutes before serving to allow to get cold.
- keep cold until read to serve.
