Simple Sweet Potato Potage

  1. Peel the sweet potato, thinly slice, and blanch in water.
  2. Once the sum has been removed, drain the water.
  3. Slice the onion thinly as well.
  4. In a pot, melt the butter and add the sweet potato and the onions.
  5. Pan-fry until softened, but be careful to make sure that they don't burn.
  6. Add the water and the bouillon to the pot.
  7. Cover with a lid and cook for about 20 minutes.
  8. Simmer the vegetables until they are soft and tender.
  9. It's fine to heat over high.
  10. Put the veggies in a blender and blend until smooth.
  11. Then, add then right back into the pot.
  12. Cook on a low heat setting while adding the milk and mixing well.
  13. Keep adding until it reaches a consistency you prefer.
  14. Season with salt and white pepper, and it's done!
