Southern Fried Chicken
- 1 whole Broiler/fryer Chicken (2-1/2 To 3-1/2 Pounds), Cut Up
- 3 Tablespoons Lisas Seasoning Mix, Recipe Below
- 2 Tablespoons Hot Sauce
- 2 cups All-purpose Flour
- 4 cups Cooking Oil
- 2 Tablespoons Salt
- 2 Tablespoons Ground Mustard
- 2 Tablespoons Paprika
- 2 Tablespoons Garlic Powder
- 2 Tablespoons Onion Powder
- 1 Tablespoon Celery Salt
- 1 Tablespoon Black Pepper
- 1 Tablespoon Sugar
- 1 Tablespoon Dried Parsley
- 1/2 Tablespoons Dried Thyme
- 1/2 Tablespoons Poultry Seasoning
- 1/2 Tablespoons Oregano

- Place the chicken pieces in a large bowl and add 3 tablespoons of the Lisas Seasoning Mix* and the hot sauce, massage the seasoning into the chicken.
- Place 1 cup flour in a large brown bag; add chicken, a few pieces at a time.
- Roll the bag tightly and shake to coat.
- Remove the chicken from the bag and shake off excess flour.

- Heat the oil to 350 F in a deep pot or deep fryer.
- Do not fill the pot more than 1/2 full with oil.
- Fry the chicken in the oil until brown and crisp.
- Dark meat takes longer than white meat.
- It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
- If you are in doubt about the doneness of your meat, you can place chicken in a 250 F oven for 10-15 minutes or until chicken juices run clear.

- Remove chicken from the oil and let drain on paper towels.
- * Seasoning Mix ~ Combine all listed ingredients.
- Yields 1 Cup (remaining seasoning will last for months in an air tight container).
