michael's chili stew
- 2 tablespoons paprika (hungarian)
- 1 tablespoon oregano
- 12 tablespoons chili powder (of choice)
- 14 cup cumin
- 14 cup chicken bouillon
- 3 (12 ounce) cansflat beer
- 2 cups water
- 2 lbs ground pork
- 2 lbs beef chuck, cubed
- 2 lbs lean ground beef
- 12 cup vegetable oil
- 4 large onions, diced
- 10 cloves garlic, chopped
- 1 (8 ounce) can tomato puree
- 1 green pepper (bell)
- 8 hot peppers (habanero)
- 1 tablespoon masa harina
- in a large pot combine oregano,paprika,chili powder,cumin,chicken bouillon,beer& 2 cups water bring to a boil reduce heat& simmer while waiting on next step to be done.
- in a separate skillet sear meat in batchs when all meat is seared add to simmering spices add enough water to cover meat, then simmer for 90 minutes.
- saute onions,garlic& peppers add to chili along with tomato puree.
- cook for 1 hour,if you want thicker stew add 1 tbsp masa harina to 1 tbsp water and add to stew then eat may serve with rice or beans on the side.
