Apple-Cinnamon Bread Pudding
- 1-1/2 gal. apples, unpeeled, sliced Safeway 1 lb For $0.99 thru 02/09
- 1 cup Unsalted butter
- 1-1/4 gal. Whole or 2% milk
- 1-1/2 qt. JELL-O Vanilla Instant Pudding
- 2 gal. cinnamon-raisin bread, cubed, toasted
- 4 tsp. apple pie spice
- Saute apple slices in butter on medium heat until tender.
- Set aside to cool.
- Place milk and pudding mix in bowl of electric mixer fitted with paddle attachment.
- Beat on low speed until moistened.
- Beat on medium speed 2 minutes.
- Toss apples, bread cubes and apple pie spice in large bowl.
- Add pudding; stir gently until well blended.
- Pour into 2 full hotel pans (or 1 half hotel pan for trial recipe); cover.
- Refrigerate at least 1 hour to allow bread to moisten.
