Caramelized Onion Tart with Goat Cheese and Thyme
- 1 (14-oz.) sheet frozen puff pastry, thawed
- 1/4 c. Country Crock Original
- 2 large onions, thinly sliced into half moons
- 2 tbsp. brown sugar
- kosher salt
- Freshly ground black pepper
- 8 oz. goat cheese, crumbled
- 10 fresh thyme sprigs
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- On a floured surface, roll out puff pastry to a 9-by-13" rectangle.
- Transfer puff pastry to prepared baking sheet and prick all over with a fork.
- Bake until golden brown, 15 minutes.
- Let cool slightly.
- Meanwhile, in a large pot, warm Country Crock Original over medium-high heat.
- Add onions and cook until golden, 10 minutes.
- Add brown sugar and cook 5 minutes more.
- Season with salt and pepper.
- Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges.
- Sprinkle with goat cheese and scatter thyme sprigs on top.
- Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes.
- Let cool slightly, then cut into squares and serve.
