Thai Chicken Potato Salad
- 500g Desiree potatoes, quartered
- 600g cooked chicken, skin removed and meat shredded Whole Foods 1 lb For $3.99 thru 02/09
- 1 bunch broccolini, blanched
- 1 red capsicum, cut into strips Target 1 pkg For $2.99 thru 02/06
- 1/3 cup KRAFT Creamy Egg Mayonnaise
- 1/3 cup milk
- 2 tablespoons green curry paste
- fresh coriander leaves, to serve
- Cook potatoes in boiling water until tender.
- Drain.
- Arrange potatoes, chicken, broccolini and capsicum on a serving plate.
- Combine mayonnaise, milk and curry paste until smooth.
- Drizzle over salad and garnish with coriander leaves.
- Serve hot or cold.
