Thai Chicken Potato Salad

  1. Cook potatoes in boiling water until tender.
  2. Drain.
  3. Arrange potatoes, chicken, broccolini and capsicum on a serving plate.
  4. Combine mayonnaise, milk and curry paste until smooth.
  5. Drizzle over salad and garnish with coriander leaves.
  6. Serve hot or cold.
